National award winning butcher Pat O’Doherty, Belmore Street Enniskillen, holding the prize he won for his beefburgers
A SECRET that an Enniskillen butcher has kept under wraps for the past two years has been unveiled – and won a UK-wide award.
That butcher is Pat O’Doherty, Belmore Street, Enniskillen, whose new lamb and anchovy burger picked up the UK Speciality Burger of the Year 2014 at a competition in Birmingham on Monday.
Pat had won the same award for his ‘grass fed’ burger at the biennial competition, but the butcher, who has been working full-time in the business for close to 25 years, was ‘over the moon’ to take home the prize again.
“We’re thrilled to get it,” he told the Fermanagh Herald, “this burger we created, believe it or not, was two years ago – and we saved it for this particular event.
“I’d a burger under wraps that no-one had ever seen before.”
The family-run business, since Pat’s father, James, took it over in 1957, is famed for its innovation – and Pat knew he had something special with this particular burger.
“It might seem like a wacky combination. But anchovy is a very salty fish – so if you put saltiness onto, say a lamb roast, you’ve got the saltiness of the anchovy cooking on the lamb and one blends with the other. So I thought it would work with a burger.
“I didn’t know if it would work just as well – it was a phenomenal success.”
Before the competition in Birmingham, only a handful of people knew about the burger, and Pat is delighted to finally get it out into the public eye.
