Why did you become a chef?
Seeing how much comfort and happiness food brings to people was a fundamental moment in my life and I am so lucky to be able to express my creativity through food and see people enjoy it daily.

What is your signature dish?
Although I fell in love with the Mediterranean cuisine, because of its freshness and vibrancy, there is nothing that beats a good braised lamb shank, served with some velvet celeriac and truffle puree and a good slow cooked jus. It will be featured on our menu this winter.

What chef do you admire and why?
I find a lot of inspiration reading through all the wonderful books written by so many amazing chefs, but Marcus Wareing’s work has always left me with a feeling of motivation to develop my skills more and more.
