Focus On: Chefs – Lusty Beg Island Resort

Name: Marta Szczęsna

Business: Lusty Beg Island Resort

Why did you become a chef?
I have always felt that the kitchen is a place filled with magic, where flavours dance like notes in a symphony. As a child, I watched in awe as my grandmother, an exceptional cook, prepared meals with love. It was in her kitchen that I discovered the power of food to bring joy and comfort to people’s lives.

What is your signature dish?
My signature dish is a One Hundred Layer Lasagne. It is an indulgent twist on a Classic Lasagne with layer upon layer of lasagne sheets, tomato sauce, creamy bechamel, and a delicious mix of cheddar, mozzarella and parmesan. Keep an eye out for this dish on the launch of Lusty Beg’s winter menu if you simply must try it for yourself!

What chef do you admire and why?
There are two chefs who have had the greatest impact on my journey. The first is Marco Pierre White. His passion, precision and dedication to the craft are truly remarkable. I admire how he approaches cooking as an art, always striving for perfection. Marco taught me that being a chef means constantly pushing the boundaries of creativity. The second chef who holds a special place in my heart is my dear grandmother. She may not have been famous worldwide, but her kitchen was my sanctuary. She taught me that cooking is not just about recipes; it’s about infusing every dish with genuine love and care. My grandmother’s food was always seasoned with love, and it’s her legacy that inspires me to create dishes that touch the soul.
