Local students take the cake at Uni awards

THE UNIVERSITY of Ulster Students’ Union, Ulster SU, announced the winners of the SU Enterprise Project at a prestigious awards ceremony in the Gallery of the Belfast campus last Thursday night.

There could only be one winning group and it was Emma Mullan and Karen Wray from Enniskillen.

Emma and Karen set up their business ‘CupACake’ with class mates Shaunagh Devlin and Colleen O’Donnell and won a cheque for £1829.

After being announced the winners and receiving their prize money Karen Wray commented:

“We are just so thrilled to have won the Enterprise Project, this feels amazing.

“We worked so hard on our pricing strategy and branding through posters, plasma screen ads and our uniforms by Sign Design Enniskillen.

“We had to make 250 cupcakes each and spent the whole day before hand icing 1000 of them.

“For CupACake to be a success we developed traditional flavours that would please everyone as well as more unusual ones to entice our customers- we hoped this would help us target lecturers as well as students.”

She added: “I have learnt so much from this project such as time management skills and how to be creative with a small budget and even got experience negotiating with other local businesses.

“I want to thank our mentor, Sean Nelson and the Students’ Union for this brilliant experience.”

The SU Enterprise Project was a business competition designed to help students gain necessary business skills that they will need in the highly competitive market place.

This unique project gave the four finalists an opportunity to run their own business for the day on any campus of their choosing.
